Untargeted Lipidomics of Industrial Yeast Strains by LC-QTOF/MS

Comprehensive analysis of lipid molecules in budding yeast Saccharomyces cerevisiae, a model eukaryote organism, was performed using LC-QTOF/MS in a data-dependent acquisition (DDA) mode. 362 molecular species in 28 lipid classes in four industrial S.cerevisiae strains (laboratory yeast, wine yeast, bread yeast, and sake yeast) were successfully identified by MS-DIAL software. A clear difference in fatty acids chain length, the abundance of cardiolipin and CoQ6, and total amounts of TAG and SE was observed among the four strains, suggesting the relevance of the lipids and industrial yeast phenotypes.
