トリプル四重極検出器を用いた食品のワイドターゲットリピドミクス
Lipids are complex biomolecules with diverse properties and functions. Lipids are major components of cell membranes and fatty tissues and serve as key molecules for energy storage. Understanding lipids is critical in a wide range of fields, including food, agriculture, and medicine. Lipidomics is the study of the lipidome: the entire complement of lipids within a given biological system, such as a cell, tissue, or volume of plasma. Recent advances in analytical techniques have made it possible to map a wide range of lipids, including isomers and homologues present in the lipidome. Moreover, a technique combining liquid chromatography and tandem mass spectrometry (LC/MS/MS) has made it possible to measure hundreds of lipids in a short time with high specificity. Comprehensive analysis of lipids contained in food products is expected to help explore functional components of food products and increase the additional value of food products.
In this study, we have succeeded in comprehensively analyzing lipids in three beverages (cow's milk, almond milk, and soy milk) and five grains (oats, rice, flour, soy, and corn) using a triple quadrupole detector, and report the details.
